I ran across this Gluten-Free Chicken Ramen Noodle Soup recipe on Pinterst and knew immediately I had to try it. After running to Whole Foods for a few missing items I kicked everyone out of the kitchen and went to work.
The recipe is very straightforward and easy to follow. Love all the tips on where to find food items and great substitution suggestions. The soup was delicious, and since the recipe makes four servings its great having extra servings in the fridge for a quick lunch when I am pressed for time.
Also, I’m planning on taking a couple with me to the tournament this weekend, fast and healthy lunch while out of town (and I won’t have to worry about finding a GF restaurant for at least one meal).
Very excited about the recipe and I am already planning on tweaking a couple ingredients next time (flavor variety) such as substituting cilantro for the scallions and adding a bit of lime and red pepper flakes…can’t wait!
